Two Meals at Once!
Alright, so I know I just posted not ten seconds ago but I REALLY wanted to make this post. I was the healthiest when I was single and living on my own. Now, I love my boyfriend very much, and because I want to impress him with my wonderful cooking, I tend to make meals I KNOW he’ll love. Pulled Pork, Lasagna, Shepherd’s Pie. Going back to my fantasy about an extrordinary reaction that ends in exclaiming I am the best cook ever, I guess I assume that zucchini and squash summer casserole might not get the reaction I’m looking for. I know the wonderful meals I ate when I was growing up will get the boys’ approval. Oh yes, did I mention that not only do I live with my boyfriend, but TWO other boys as well!
Now that’s all fine and dandy making yummy meals like that but it’s not good when me, a tiny little girl, decided that I could eat the same thing as all these giant hungry boys I live with. WRONG. Ladies, our bodies do need to eat like that! But now we have a dilemma! How can we start eating better and healthier and feed our loved ones the delicious food they love? There are two ways: 1) Just eat less. Last night I made chicken wings from Costco. They had about 10 each, where as I had 3 with a Caesar salad. Don’t try and eat 10 chicken wings! You might want to, being healthy but mostly weight-loss requires disipline! 2) Modify meals to make them healthy. Like I will demonstrate with my next recipe, you can make a meal for yourself and for those hungry boys who can eat a pound of wings without batting an eye.
Baked Spaghetti and Meatballs With Modifications!
1 can of Paul Newman’s 4 Cheese sauce
1/2 pack of spaghetti noodles
1/2 package of Compliments Chicken Meatballs
1/2 cup Mozzarella cheese
1 yellow Pepper
2 bunches of kale
Oregano, Parsley, Basil, Pepper, Garlic Powder
So heat the oven to 375 and put in the meatballs. They are the best chicken meatballs I’ve ever had and they are pretty good nutrition wise! Next boil some water and cook the pasta. at the same time heat the sauce in a saucepan and add the spices and yellow pepper.
Now, cut up the zucchini and kale. Put them in small plastic baggie, add a little bit of each spice again and shake them all around. Make sure the veggies are all coated.
Now, put the veggies in a pan, or a container (I made this for my lunch). Take the meatballs out of the oven and cut them all in half. Pour a little bit of the sauce over your veggies, mix in 12 meatball pieces and a bit of mozzerella cheese. Your supper is done!!
Now, the noodles should be done so strain them and put them back in the pot. Add in the rest of your sauce and then stir in the meatballs. Make sure everything has sauce on it, spray the bottom of another pan and dump it all in! Then put the rest of the cheese on and that ones done too! Now you have the healthy and normal version of the same meal! Now if you do decide to have some of the spaghetti just make sure you use a smaller plate and take a smaller portion. The small plate tricks your brain into think you’re full.
